The incident occurred at a property on Willow Vale Road at Wallerawang with the landholder finding a sheep with a puncture wound that he believed was from a gunshot.
Officers from Lithgow were called to the property on July 21 to investigate.
"He had heard gunfire on or near his property the previous evening and believes the animal had been shot," NSW Police state rural crime co-ordinator Detective Inspector Cameron Whiteside said.
"If you saw anyone hunting or acting suspiciously in the area around this time, or you know anyone who was hunting, please contact Lithgow Police Station on 6352 8399."
"Alternatively, you can contact Crime Stoppers online or by phone on 1800 333 000, anonymously if you wish."
Detective Inspector Whiteside said the NSW Police Force's rural crime prevention team conducts ongoing operations in response to trespassing and illegal hunting.
He urged people to ring their local police station or triple-0 immediately if they see someone trespassing on their property.
