The Craft Works Distillery owner has been brewing, distilling and making whisky among other things at his cellar door located behind Capertee Royal Hotel since 2018.

'I AM...' was Capertee's first single malt whisky launched in November and despite costing a hefty $220 per 500ml bottle, has been flying off the shelves.

"We are completely sold out and at $220 it is not cheap so it shows people appreciate craft whisky and at cellar door its been crazy popular," Crafty said.

He said this whisky was a special release, blending different barrels to create a certain flavour profile.

"One of the barrels has come from Pieter van Gent winery in Mudgee, and it's crafted a really unique, flavorsome whisky," he said.

Crafty said for this recipe he was influenced by a stout beer which has led to a rich whisky containing, chocolate, coffee and toffee notes.

"It's a very complex tightly woven whisky with layers upon layers to experience.

"It's balanced and reflects what we are doing, we are on a journey," he said.

Crafty said he was proud to receive his third international award with the creation and hoped it helped to put Capertee on the map.

"This is a very prestigious global competition, it feels fantastic to have the respect of the international spirits community and know we are making something pretty special in our little old shed at the back of the Capertee Royal Hotel," he said.

"Capertee has one of the most stunning valleys in the world, and its people and its climate... I feel privileged to be able to promote it to the world.

"I am so honoured to be part of this and from the craft spirits power house that is New South Wales.

"Humanising the art of whisky is what we are about."
