NSW Police rural crime investigators say the sheep were taken from a property on Triamble Road at Hargraves in July.
"The sheep were crutched in March this year prior to being put back in a paddock as part of a larger mob and were due to be shorn in July this year," State Rural Crime Co-ordinator Detective Inspector Cameron Whiteside said.
"At this time the shortfall was confirmed."
Detective Inspector Whiteside has called on anyone with information to contact Mudgee Police Station on 6372 8599 or Crime Stoppers on 1800 333 000.
Last year in NSW, farmers reported 20,000 individual head of stock stolen which were worth $3.2 million.
