Sione started an apprenticeship as a chef back in 1984 at the Sydney Tower and has never looked back.
While growing up in Tonga, Siones’ parents had their hearts set on him becoming a doctor but he went with his dream to become a chef.
A dream that has led him through some busy and challenging kitchens in Sydney.
Now it’s brought him here to Surveyors Restaurant.
According to a spokesperson for Surveyors Restaurant, Sione has already shared some of his influences, along with his ideas and vision for the restaurant.
Sione has engaged with the community to develop a new menu which will be launched in February, to coincide with Valentine’s Day.
Siones’ new menu is focused on supporting local producers and suppliers.

Sione said his favourite cuisine was anything seafood as it was a passion for him to cook.
Country living was one of the main reasons Sione decided to reside in Lithgow and join the Surveyors’ team.
“Country living, to have a country life experience and bring great food to Lithgow,” he said.
Surveyors’ new menu will feature a variety of seafood options and seasonal specials and starting mid-February they are launching Fish and Chip Friday where guests will be able to enjoy the last of the summer twilight from the lush lawn at Surveyors Restaurant.
“So, with great enthusiasm we welcome our new Chef, Sione Teaupa to Surveyors Restaurant,” a spokesperson said.
