The picnic attempted to recreate an essential event in Australian food history, which occurred in 1875. Entrepreneur Thomas Mort invited 300 special guests from Sydney to lunch at his Lithgow meat works, where they were served a three course meal.
After the guests ate, Mr Mort announced that every single dish had been prepared weeks earlier and frozen, some had been prepared up to 18 months beforehand. He famously stated that thanks to his patented refrigeration technology, “there shall be no more waste”.
